Mandira’s Kitchen is the only place in the Surrey Hills serving an Indian afternoon tea, daily at Silent Pool, near Guildford.
Afternoon tea, but with chai in its bones. There are savoury bites, Indian sweet fancies, masala and cardamom scones and proper bottomless chai, served in our barn about ten minutes from Guildford.
On the stand: Bombay bhel, cocktail samosas and sandwiches from our kitchen; chocolate-dipped laddus, gajar halwa triangles and mini gulab jamun tartlets; scones with rose jam, clotted cream and tomato and date chutney; mango lassi shots and bottomless masala chai or Darjeeling tea. The sweets and savouries shift a little with the seasons.
It began on a tea plantation in Assam
The recipes started in a family kitchen on an Assam tea plantation and travelled, past railway stations and bazaars and a dusty track, into a barn above Silent Pool. We cook everything from scratch with single-estate spices. If Mandira’s grandmother would not recognise the ingredient, we do not use it.
